Why Don’t We Ever Drink Milk From Pigs?

For roughly 9,000 years, humans have consumed the milk of other mammals, yet the global dairy industry rests on a remarkably narrow foundation. Of the more than 6,000 mammalian species that produce milk, only a handful have ever been successfully milked by humans on a meaningful scale, and one animal—the cow—dominates the market so completely that alternatives are almost invisible. The question of why we don’t drink the milk of pigs, horses, rabbits, or whales is not primarily about taste or nutrition. It is a story of early agricultural choices, animal behavior, biology, and a specific genetic mutation that altered the course of human evolution.

Pig milk, for example, has been described by researchers who have tried it as rich, creamy, and even suitable for cheese. Yet, it never became a dairy product. The obstacle is not flavor but behavior. Cows are docile and have udders with cisterns where milk collects and can be released steadily.

Pigs, by contrast, are intelligent, emotionally complex, and highly protective of their young. A nursing sow releases milk in short bursts lasting only 15 to 20 seconds, triggered by her piglets’ stimulation. Milking a pig would require repeated, dangerous attempts to extract small amounts from an animal that is likely to resist aggressively. Horse milk presents a different set of problems.

While horses were domesticated for transport, their milk is high in lactose and low in fat, making it thin and unsuitable for butter or traditional hard cheese. Central Asian cultures adapted by fermenting it into kumis, a mildly alcoholic drink, but elsewhere it never gained a foothold because it could not be processed into stable solid foods. Rabbit milk is even more extreme. Because a mother rabbit nurses for only about five minutes a day, her milk is intensely concentrated, packed with protein but nearly undrinkable for humans.

The logistics of milking thousands of rabbits to produce a single glass render the idea impractical. Marine mammals like whales produce extraordinarily fatty milk—around 50% fat—to fuel rapid calf growth. But these animals cannot be captured or kept, and the milk’s density would cause severe digestive distress in humans. The deeper historical context is that for most of human existence, drinking milk as an adult was harmful.

Like all mammals, humans naturally stop producing lactase, the enzyme needed to digest lactose, after weaning. Around 7,500 years ago, a genetic mutation allowing lactase production into adulthood appeared in Central Europe, in the region associated with the funnel beaker culture. This trait, known as lactase persistence, offered a survival advantage: people who could digest milk accessed a food source that did not require killing the animal. The mutation spread rapidly across Europe and parts of Africa and the Middle East.

Despite this, approximately 65% of the world’s population remains lactose intolerant today. Why did the cow become the universal standard? The late geographer Jared Diamond and other researchers note that only about 14 large mammals were ever successfully domesticated. For an animal to be milked, it must be social, submissive, able to breed in captivity, and have a diet that does not compete with human food supplies.

Cows fit all these criteria. Pigs compete with humans for grain, horses are too flighty, and deer often refuse to breed in captivity. Once the cow became central to dairy production, decades of selective breeding made it even more dominant. Modern dairy cows can produce over 20,000 pounds of milk per year.

Today, the dairy industry is locked into a path dependency: machinery, regulations, and supply chains are all built around the cow. Switching to another animal would require starting from scratch. Archaeological evidence suggests early farmers experimented with milking whatever they could catch, but the process was not one of confident mastery. Lipid analysis of clay sieves from sites like Bylany in the Czech Republic shows milk residues on pottery dating back about 7,000 years, indicating urgent attempts to secure food in hostile environments.

The choice to drink cow milk was not based on superior nutrition or taste. It was the result of a survival competition in which the most convenient animal won. Today, consumer preferences remain culturally conditioned. People drink cow milk but often recoil from the thought of other mammals’ milk, despite the fact that these preferences are not rooted in scientific or health-based reasoning.

The dairy industry’s dominance also shapes alternatives. Plant-based milks like almond or oat are designed to mimic the chemical profile of cow milk, reinforcing the bovine standard rather than replacing it. The entire system—from advertising to school lunch programs—reinforces the idea that specifically cow milk is essential to the human diet. The decision that led to this outcome was made thousands of years ago.

Early farmers facing famine and crop failure found that cows provided a continuous source of protein and fat from grass, a food humans cannot digest. The cow won not because it was the best milk producer, but because it was the easiest animal to control and the most accommodating to human needs. The final known outcome of this historical trajectory is clear: the global dairy industry is built almost entirely on cows, with goats, sheep, and buffalo playing minor roles.

Every other mammalian species remains effectively absent from the dairy market, not because their milk is undrinkable or unappealing, but because of behavioral barriers, biological incompatibility, and a legacy of choices made long ago that continue to shape what we consume today.
